Ingredients:

  • 2 cans (14.75 ounces each) wild red salmon (or pink salmon)
  • 2 eggs
  • 6 green onions, minced
  • 1/2 cup panko breadcrumbs
  • 1/2 cup grated parmesan cheese
  • Juice of 1 lime
  • 4 tablespoons avocado oil (or olive oil)

Directions:

  1. Preparation: In a bowl, combine salmon, minced green onions, panko breadcrumbs, grated parmesan, and lime juice. Mix well.
  2. Cooking: Heat 1/4 cup of vegetable oil in a medium iron skillet over medium-high heat. Drop spoonfuls of the salmon mixture into the skillet and flatten slightly. Fry for approximately one minute on each side until golden brown.
  3. Drain and Serve: Place the cooked salmon cakes on a paper sack or paper towel to drain excess oil. Serve hot and enjoy with your favorite side dish, such as macaroni and cheese or a cold vegetable salad and rice.
