Old Fashioned Salmon Patties

Grandmother’s Classic Salmon Cakes Recipe

Time-Honored Family Recipe

This recipe for my Grandmother’s famous salmon cakes has been cherished and passed down through generations. It’s a simple yet delicious dish that has stood the test of time.

Nostalgic Comfort Food

Before the era of fancy food movements, recipes like this one prevailed. I fondly recall my mother preparing these salmon cakes when I was young. Using canned salmon and saltine crackers may seem humble, but they deliver a delightful surprise, especially for those accustomed to more elaborate dishes.

Health Benefits of Fish

While this recipe involves frying, it still offers the nutritional benefits of fish. Despite its crispy exterior, these salmon patties remain a wholesome choice.

Memories in the Kitchen

Just as certain stories from childhood don’t always align with our desires, my Mama often cooked meals that weren’t my preference but were beloved by my Daddy. The aroma of this dish would fill our kitchen, evoking memories of family gatherings and shared meals.

Ingredients:

  • 2 cans (14.75 ounces each) wild red salmon (or pink salmon)
  • 2 eggs
  • 6 green onions, minced
  • 1/2 cup panko breadcrumbs
  • 1/2 cup grated parmesan cheese
  • Juice of 1 lime
  • 4 tablespoons avocado oil (or olive oil)

Directions:

  1. Preparation: In a bowl, combine salmon, minced green onions, panko breadcrumbs, grated parmesan, and lime juice. Mix well.
  2. Cooking: Heat 1/4 cup of vegetable oil in a medium iron skillet over medium-high heat. Drop spoonfuls of the salmon mixture into the skillet and flatten slightly. Fry for approximately one minute on each side until golden brown.
  3. Drain and Serve: Place the cooked salmon cakes on a paper sack or paper towel to drain excess oil. Serve hot and enjoy with your favorite side dish, such as macaroni and cheese or a cold vegetable salad and rice.

Conclusion:

These salmon cakes are simple, easy to make, and incredibly delicious. Despite their humble origins, they offer a delightful burst of flavor that will surely satisfy your taste buds. Give this recipe a try, and you won’t be disappointed! Bon appétit!
